Perhaps you remember my mom’s recipe for Beef on Rice? (If you aren’t familiar with it, don’t worry, there’s plenty of time to acquaint yourself.)

My mom would make this dish in the slow cooker, and excitedly announce as we went off to school, “Beef on rice tonight kids!” to give us something to look forward to all day. Because we totally all looked forward to this dish. The beef was tender and juicy after cooking all day and it took very little effort to get it that way. It’s the most perfect comfort food dish.

But, let’s say you are sick of the slow cooker or you forgot to add your ingredients to it before you left for work or you just want to play with your new Instant Pot (there’s no shame in that), then this Instant Pot Beef Tips recipe is for you. It’s everything you loved about Beef on Rice except quickly cooked in your Instant Pot for (nearly) instant gratification.

I added a couple extra ingredients to this recipe (mushrooms, garlic, worcestershire) but you can skip them if you want and this recipe will be almost exactly like the Beef on Rice except adapted for the Instant Pot.

What Kind of Beef is Used for Beef Tips?

I admit, the term “beef tips” is kind of nebulous when you think about it, isn’t it? What constitutes the tip of some beef anyway? Well, I was curious myself so I did a little digging. It turns out that beef tips are not made from one specific cut of meat but rather can come from a variety of cuts. Sirloin, chuck roast, or another tougher, fattier section of meat is used. The butcher will likely have already cubed these up at your grocery store and labeled them as “stew meat” or “beef tips.” Any variety will work in this recipe as you’ll cook it long enough to tenderize the meat.

Best Side Dishes for Beef Tips

As you know, my mom’s original recipe for Beef ON Rice was just that — beef tips slow cooked all day and with a to-die-for gravy served ON top of rice. I still like beef tips served this way but other options include:

  • Using brown rice or a wild rice mix for a different taste and texture to your meal.
  • Using mashed potatoes as your base.
  • Egg noodles are a perfect complement to beef tips, I promise you’ll enjoy the heck out of noodles and beef together.
  • Polenta or grits — something you probably didn’t think about but just as delicious to layer under the beef tips.
  • Instead of adding beef tips on top of a starch, you could add something like roasted potatoes on the side.
  • For a carb-free meal, consider adding a salad or roasted vegetable on the side.
  • You might also enjoy these beef tips over any of the above and with a side of dinner rolls for dipping in all of that wonderful gravy.
  • Braised red cabbage is another veggie side that is just screaming to be served with beef tips.
  • Serve this beef with garlic bread for an out-of-this-world, delicious dish.

Expert Tips and Tricks

For this dish, I added mushrooms, garlic and worcestershire sauce. There are other ways you could customize this dish as well, including:

  • Steaming broccoli and adding it to the dish at the end when it’s time to make the gravy (during step 5).
  • Use a variety of mushrooms — any kind will be delicious!
  • Try adding a tablespoon of soy sauce instead of or in addition to the worcestershire.
  • Substitute half a cup of red wine for half a cup of the beef broth for a deeper, richer flavor to your gravy and sauce.
  • Add your own Italian seasonings if you don’t have an Italian blend seasoning. Or use a dry packet of Italian dressing.
  • Diced celery and carrots cook up nicely with the beef and gives the dish more of a hearty “stew” vibe and taste.

FAQs

How long do you pressure cook beef tips in an Instant Pot? ›

Return beef tips to the pot and stir until well combined. Pour condensed soup over the top; do not stir. Close and lock the lid. Select high pressure according to manufacturer's instructions; set the timer for 25 minutes.

How long does it take to cook 2 pounds of beef in the Instant Pot? ›

For example, cook a 2-pound pot roast at high pressure for 40 minutes and a 3-pound pot roast for 60 minutes. Frozen beef: I highly recommend thawing your beef for this recipe, since you cannot sear the frozen beef. If you must use frozen beef, assume 30 minutes per pound.

Does Instant Pot make beef tender? ›

All Cuts of Meat Can Become More Tender in a Pressure Cooker.

What is the best cut of beef to use in an Instant Pot? ›

You can cook any cut in a multi-cooker, but we recommend those from the chuck and round. These beef cuts typically take hours to prepare using braising and roasting methods. The multi-cooker allows you to make your favorite pot roast, beef stew or one-pot meal in much less time.

Can you overcook beef in Instant Pot? ›

In a few words, yes! You can also undercook it, too. Overcooking the meat would result in a very dry tasting pot roast.

Why is my beef tough in Instant Pot? ›

To prevent a chewy beef steak, you need to avoid using too much high-pressure heat. Of course, start with pressure cooking your roast (that's why you're using the Instant Pot anyway), but keep that high-pressured phase to a few minutes only.

How much liquid do you need for Instant Pot beef? ›

The Instant Pot won't come to pressure without a bit of liquid. We found 1 cup was just enough to avoid stewing the beef. Don't throw out the sauce at the end. It's amped up with flavor from cooking with the beef and is absolutely decadent spooned over medium-rare slices.

Do you cover meat with liquid in a pressure cooker? ›

While you may cover meat almost completely for a conventional braise, use just enough liquid for the cooker to reach pressure – during pressure cooking the meat will release it's own juice and braise in that flavorful liquid, instead. DO use fresh herbs.

Can I use chicken broth instead of beef broth? ›

Like beef broth, chicken broth is a kitchen staple and makes a good substitute if you are all out of the meaty broth. This savory, salty liquid has a milder flavor than beef broth but is a good one-to-one replacement. Chicken broth also has a similar nutrition profile to beef broth, low in calories and high in sodium.

Do I need to brown meat before pressure cooking? ›

Brown it

Pressure cooked food doesn't brown so it's worth doing this at the start of cooking before adding liquid and putting the lid on. Meat looks and tastes more appetising with a little browning. Onions, garlic and spices also benefit in the flavour stakes from pre-cooking.

Can you put raw meat in Instant Pot? ›

Cover bottom of the pot with 1 cup cold water for a 3 or 6-quart instant pot and 1.5 cups of cold water for an 8-quart instant pot. Add in trivet and place frozen or fresh ground meat directly on trivet. Sprinkle with salt and pepper as desired. Put the lid on the Pressure Cooker and turn valve to seal.

Is beef more tender in a pressure cooker or slow cooker? ›

Tenderises Tough Cuts: Slow cookers excel at turning tough cuts of meat into fork-tender delicacies.

How many minutes per pound do you cook meat in an Instant Pot? ›

Add 1 1/2 cups of liquid (water, stock, etc.). Cook for 20 minutes (per pound of meat) at high pressure for large chunks and 15 minutes (per pound of meat) for small chunks. Use a quick pressure release method.

Does meat brown in an Instant Pot? ›

FAQ: Can I sear meat in an Instant Pot? Yes, you can sear meat in an Instant Pot using the sauté function. This allows you to brown the meat before pressure cooking, which helps enhance the flavor and texture of the meat.

What's the best meat to cook in a pressure cooker? ›

You can still pressure cook leaner pieces – like eye of round and top sirloin – but these work best if they've been stuffed, shredded or rolled (with other ingredients). Best cuts of beef to use: Chuck steak, Round Roast, Shoulder, Pot roast, Ribs, Brisket, Oxtail.

How long does it take for meat to become tender in a pressure cooker? ›

Steam penetrates food easily under pressure. So connective tissues in cubes of beef for soups or stews soften in 15 minutes or less, and a pot roast will be medium-rare in 30 minutes.

Is the meat stew setting on Instant Pot high pressure? ›

Instant Pot Instructions: Place everything in the Instant Pot. Select the stew/meat setting (about 35 minutes, high pressure).

What happens if you pressure cook beef too long? ›

If you prepare meat in a pressure cooker and it turns out dry, this is usually because the meat has cooked too long & the natural juices have been squeezed out. The result is a tasty gravy but dry meat.
