There has been enough said about Sweet Crepes. We get it. They are good.

Growing up in Ukraine, we had crepes pretty often on our family table. Usually, they were stuffed with mushrooms, meat, or sautéed cabbage for savory flavors, and with jam or cottage cheese and raisins for the sweet tooth. I liked the sweet ones best.

I make these Sweet Crepes for breakfast every Sunday. They are so easy to make (Yes, EASY!) and so versatile. My husband loves these stuffed with Nutella, strawberries, and banana, and my toddler and I enjoy them as is.

NOTE: While cooking crepes, you don't have to grease the pan with butter for every single one. Grease it once just before cooking the first crepe and this should be enough. Use just a little bit of butter to prevent sticking. You may also choose to substitute butter with coconut oil.

Sweet Crepes FAQ:

Can I make Sweet Crepes ahead of time? Yes. You have two options:

1. You can make the batter ahead of time and store it in the refrigerator. Then, pan fry the crepes right before serving.

2. You can make the crepes, place them in an oven-proof dish, cover tightly with foil, and store them in the refrigerator. When ready to serve, place the foil-wrapped crepes in the oven, and bake for 5-7 minutes at 300ºF.

Can I use honey instead of sugar?Yes. Use 1 tbsp. of honey instead. I prefer using honey, too. 🙂

Sweet Crepe Tips:

  • Use anon-stick skilletto fry the pancakes! If your non-stick skillet has a lot of scratches, you might have trouble flipping the crepes.
  • Don’t be afraid to use your hands to help flip the pancakes, if necessary.
  • The best indicator that a crepe needs to be flipped is when the batter looks completely set, and no liquid remains.

I think that the wet and dry ingredients should be mixed separately and then put together to avoid lumpiness. I had a whisk and it turned out lumpy. But the taste was really good!

FAQs

What is the secret of a good crepe? ›

Resting the batter allows the flour to fully absorb the liquid and gives the gluten a chance to relax. While it's not the end of the world if you skip this step, it is the secret to the most delicate, melt-in-your-mouth crepes. Let the batter stand at room temperature for 30 minutes, or refrigerate for up to two days.

Is pancake batter the same as crepe? ›

The main difference is that pancake batter has a raising agent in it, such as baking powder or baking soda, and crepe batter does not. This means that pancakes are thicker and fluffy while crêpes are thin and flat.

Why are crepes healthier than pancakes? ›

According to the traditional recipe of crepes, buckwheat flour, which is healthy and gluten-free, is used to make them. Because they are thin, they have fewer calories, fat, and sugar. If you are looking for protein-rich food, fill them with Greek yogurt or nut butter.

Should crepes be rolled or folded? ›

Traditionally, crêpes are folded or shaped according to the recipe directions. However, there are many recipes that would work well with different types of folds. Crêpes are also very versatile. Once you have the basic crêpe recipe down, you can use whatever ingredients and folds you like.

What's the difference between a Swedish crepe and a regular crepe? ›

The most obvious difference is that crepes are made with a crepe roller and often have savory fillings. Swedish pancakes are made with a pan tilt to make them thin and they are almost always served with sweet fillings (lingonberries and cream, be still my heart).

What are sweet crepes called in France? ›

Crêpes are usually one of two varieties: sweet crêpes (crêpes sucrées) or savoury galettes (crêpes salées).

Should crepe batter be thin or thick? ›

Crepe batter shouldn't be the consistency of pancake batter. It should be extremely thin! Use a ladle to test the mixture's thickness and make sure it has the consistency of heavy cream — almost liquid. If you've found that it's too thick, make a thinner batch, then add both batches together to correct the problem.

What's the difference between crepes and blintzes? ›

Blintzes vs Crepes

The main difference is crepes are only cooked once, and be be served plain, without filings. Blintzes, are always served filled, usually with a cheese mixture, and are cooked twice; once when made, and again after they are filled and pan fried.

How long does crepe batter rest? ›

2 hours minimum. I personally go for 12 hours. It's important that the batter becomes strechy and soft.

Are crepes okay for weight loss? ›

When enjoyed in moderation and with mindful ingredient choices, crepes can be a delicious part of a weight-conscious diet.

Are crepes good or bad for you? ›

Crepes are a source of complex carbohydrates, which are an important source of energy for the body. They also contain protein, thanks to the eggs and milk used in their preparation. They can also be a good source of fiber if whole wheat flours are used, which are very healthy.

Are crepes high in sugar? ›

Crepes are moderately low in sugar with just 4 g in each. If you want to include more natural sugar in your diet, you may opt for healthier choices of fillings by using chopped fruits for your crepes. Since too much cholesterol can increase the risk of heart disease, the suggested intake is limited to 300 mg per day.

When preparing crepe batter, which ingredient will increase the overall richness the most? ›

The yolk is the fat sack. It adds richness that emulsifies seamlessly with the protein of the egg white and milk. It adds flavor and toothsome ness at the same time. The sugar softens the pancake a bit, and of course adds sweet flavor.

Which crepe batter has the proper consistency? ›
