Ingredients

  • 2 tablespoons coconut oil , melted
  • 2 tablespoons agave nectar
  • 1 ¼ cup plant-based milk , vanilla
  • 1 teaspoon vanilla extract
  • 1 ¼ cup whole wheat pastry flour
  • 2 teaspoons baking soda
  • ¼ cup cocoa powder
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¼ cup dairy-free chocolate chips
  • ½ cup maple syrup

Instructions

  • In a mixing bowl, combine the melted coconut oil, agave nectar, plant-based milk, and vanilla. Stir to combine.

  • In a separate bowl, combine the four, baking soda, cocoa powder, nutmeg, and salt. Stir to combine. Then pour the plant-based milk mixture into the bowl with the flour mixture and stir to combine.

  • Follow the instructions on your waffle maker to make waffles. (For standard waffle iron, spray the waffle iron with vegetable spray and pour a half cup of waffle batter onto the center, spreading it within 1/2" of edges of the waffle iron. Close the lid and allow the waffle iron to cook, usually 2 to 3 minutes).

  • To make Chocolate Maple Syrup, combine chocolate chips and maple syrup in a bowl and microwave for 30 seconds or so. Stir until the chocolate melts.

  • Serve warm with vegan butter, and chocolate maple syrup, fruit jam, and or fresh fruit.
